Cookie Monster... Or Monster Cookies?

Anything falling under the category of dessert (and of course chips... lots of chips) is the key to our hearts. This is a chocolate chip cookie recipe I found while creeping Tanya Burr's blog! It is hands down the easiest recipe I have ever made, and to be honest, the most delicious. These cookies are so large that the entire recipe only makes about 10 cookies... and yes it's completely acceptable to eat an entire cookie, maybe even two!
-Ingredients-
All of the ingredients are measured in grams, so to get the most accurate measurements we recommend using a scale!
200g Butter at room temperature
300g Caster sugar (a mix between icing and granulated sugar. Measure out 300g and then pulse it in a food processor a few times until it's dusty and grainy at the same time)
1 Large egg
275g Self raising flour
75g Cocoa powder
3tbsp Milk
Mini Rolo chocolates... or any other chocolate you love!
- Putting it all together-
As the cookie dough is extremely heavy & thick, you should definitely use some sort of electric mixer! Preheat your oven to 392°. Cream together the butter and sugar until fully combined. Next, you're going to add in the egg and continue mixing.
Once the egg is incorporated, slowly pour in the dry ingredients, alternating between the flour and cocoa powder while continually mixing. This is where the dough starts to thicken up quite quickly!
Don't panic.
Once all of the dry ingredients are mostly mixed in, add 1tbsp of milk to lighten the dough. Do not go overboard with this. I usually just go with a splash of milk, or until the dough is a smooth consistent texture.
When you're happy with the dough, add in the mini Rolos or chocolate chunks you've been loving! There is no measured amount for this because it's totally up to you how much or how little you want in the cookies. Gently fold them into the dough and set aside to get your baking sheet ready.
Any time I am baking cookies, I like to use either parchment paper or a Silpat. This saves you from having to clean the baking sheet and makes it way easier to get the cookies off when their done.
Now for the actually cookie! Grab a fist full (yes, fistful) of dough and form it into a round ball. As said before, this recipe only makes about 10 cookies so don't cheap out!
Place in the oven for 10 minutes on the middle rack. When you take them out of the oven, they're not going to look fully cooked. Again, don't panic! Let them sit for about 20-30 minutes before digging in.
