Sour Cherry Gin Fizz

Summer is long gone and the breeze blowing around has been getting colder and colder every day. But a girl can dream, we're trying to make the most of the few warm days we have left around here. Sour cherries are something that come around here in August and with my backyard overflowing with them, I find myself putting these ubiquitous little gems into everything.
One of my favourite things to do is make a sour cherry gin fizz, it's super tart and refreshing and just the lil kick of sunshine I need to salute these unusually warm October days goodbye.
Note: After I pick them, I like to pit these guys, then freeze them on a tray and then bag them so I can use them whenever I want! Feel free to use fresh ones as well! Also I'm using Bombay gin here since I find it to be the most neutral tasting one, use whatever you like!
Sour Cherry Gin Fizz
makes 2 drinks
1 cup sour cherries (thawed or fresh)
simple syrup (1:1 water to sugar)
gin
sparkling water
lime wedges
mint
Place sour cherries in a blender and blitz until liquified. Strain liquid into a small pitcher through a fine mesh sieve and set aside.
Grab your glass and round up the rest of your ingredients! Add 1/3 of a cup of the sour cherry puree followed by 1 tbsp of simple syrup or to taste. If you have left over frozen cherries, add them to the glass for instant ice cubes! If not, add ice (duh).
Add 1 oz. of gin (or more, its up to you) into the mix. Top with sparkling water and stir gently. Add a lime wedge, mint to garnish, and a straw. Put on your sunglasses, sit back, and call it a day.
