In my Youtube subscription box this week from TeenVogue, popped up this amazing video for Lucky Charm ice-cream sandwiches....Lucky Charm treats are something that I make on a decent basis using this super simple recipe here! Think Rice crispy squares but substituting one childhood cereal for the next. Amazing. Now taking something so gooey, sugary and delicious to the next level was almost too much for me to handle, which meant I had to share it with you!
Here's what you're going to need:
- 3 cups Luck Charms
- 4 cups marshmallows
- 1/4 cup butter
- Favorite flavour of ice-cream

Before you start making any of it, you need to get yourself a well greased pyrex pan, or cookie sheet. Something that won't stick to the treats. Once you've sorted that out you can start by fully melting your butter on a medium heat and then add in the marshmallows!
Make sure you are constantly stirring the pot because you don't want to burn the marshmallows. Once they've turned into a liquid paste add in the lucky charms and stir stir stir until everything is coated in delicious goo. Depending on how marshmallowy you like your treats to be, you can add more or less Lucky Charms to get your perfect consistency.
Pour the sticky mess into your pan. Once it's in the pan, I find for this part, it's easiest to take a bit of water on your hands and smush it down into a nice flat layer. The water helps your hands stay clean from the goo, and just makes it easier to push the treats into the pan properly.
After letting it cool for ~15 minutes, take a round cookie cutter or a glass and cut out round discs. These are going to be the base for the ice-cream sandwich! Taking your favourite ice-cream, scoop a decent amount onto the Lucky Charm disc and then smear it like you would butter on toast. Grab your matching sandwich top and plunk it right on top.


-Quick Side Note-
When I went to take a bit out of this glorious creation, there was a lot of cereal treat and not enough ice-cream for my liking. I decided to just have an open faced sandwich instead of the full thing. The ice cream to treat ration was 100 times better so depending on how you like your dessert, you may need to alter it slightly to meet your sweet tooth needs!
